In an effort to be more aware of what and how we are eating, Pete & I are trying to meal plan and try new, healthy recipes. And Skinnytaste is like the mecca of amazing, lighter options for your favorite meals. We made a few and I thought I would share our cooking (mis)adventures.
First up:
Ingredients:
2 1/2 cups Oats (old fashioned, not quick cook or instant)
1 cup plain low fat Greek yogurt
2 eggs
3/4 - 1 cup sugar
1 1/2 tsp Baking powder
1/2 tsp Baking soda
2-3 over ripe bananas
Optional & delicious: lemon juice
1 cup plain low fat Greek yogurt

Directions:
1. Preheat oven to 400 degrees. Line 12 muffin tins with silicone or foil liners, or use a ton of cooking spray on a regular muffin tin (they will stick otherwise).
2. Place all of the ingredients in a blender or food processor, and blend until oats are smooth.
We did a double batch at once, and the oats with the yogurt formed sort of a paste. It looked aesthetically pleasing and it wasn't annoying at all.
*Just be sure to add the ingredients to the blender slowly so you don't end up with a mixture you could patch your walls with.
3. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.

They actually turned out pretty yummy, and at less than 100 calories a piece I feel a little more justified adding them to a light morning breakfast.

DeleteWell that sounds easy and delicious! I don't have a food processor though, so hopefully a blender will work well enough. Or maybe just a hand-held mixer? Looks good though!
